Blueberry Stuffed French Toast
Ingredients
- 6 thick slices of bread, (we suggest Texas Toast or French Toast bread)
- 4 large eggs
- ⅓ cup milk
- 1 teaspoon vanilla
For filling:
- 4 oz cream cheese, softened (room temperature)
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla
- 2 cups fresh blueberries (or more)
- 2 tablespoons butter, for cooking
Makes 3 pieces of French Toast
Directions
- In a medium bowl, whisk together softened cream cheese, powered sugar, and vanilla until smooth.
- In a separate bowl, whisk together the eggs, milk and vanilla in a bowl. Pour into a shallow dish to dip bread in.
- Spread about 1 spoonful of cream cheese mixture on one side of a piece of bread. Sprinkle desired amount blueberries on top of the cream cheese mixture. Top with another piece of bread to make a sandwich. Repeat with remaining pieces of bread.
- Melt butter in a pan over medium high heat.
- Dip the sandwich into the egg mixture, covering both sides.
- Place the sandwich in the pan and cook for about 3 minutes or until golden brown. Flip and repeat on the other side. Remove and serve immediately.
- Sprinkle with additional berries and powdered sugar and serve with syrup.
Tip: add DeGrandchamp Farms blueberry fruit topping for extra berry flavor!
