Blueberry Banana Bread
Banana bread is an easy go to when you have overripe bananas, but have you ever tried adding blueberries to your recipe? We tested it out in our kitchen, and it was so yummy! It seemed like such a no brainer to add blueberries because they go together with bananas so well! Try out our recipe and let us know what you think of this new combination!
Ingredients
- ½ cup shortening
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 cups all- purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 medium ripe bananas, mashed
- 1 to 1 ½ cups DeGrandchamp Farms blueberries (fresh or frozen)
Prep time: 10 min Bake time: 60 minutes + cooling time
Directions
- Using a mixer, cream together shortening and sugar until light and fluffy. Beat in eggs and vanilla.
- Combine the flour, baking soda and salt; gradually add to creamed mixture, beating just until combined. Stir in bananas. Fold in blueberries
- Pour into greased loaf pan . Bake at 350 for 50-60 minutes, or until a toothpick inserted comes out clean. Let cool, and enjoy!
Molly’s tip: sprinkle some extra blueberries on top before putting in the oven!
